Vegetable and turmeric risotto recipe
A classic Italian dish, risotto is a rice-based recipe that goes with a wide variety of dishes. At AYur-vana we have revisited the risotto recipe by adding turmeric powder to bring color and antioxidant and digestive properties to this dish. Discover below the Indian and vegan version of the traditional risotto, ready in just 20 minutes!
Ingredients for risotto with vegetables and Indian spices
(2 persons)
- 1/2 cup white rice
- 1 1/2 cup of water
- 1 tablespoon of Turmeric
- 1 tablespoon of olive oil
- boiled vegetables: leek white, chicory, celery
- 1 small tomato in pieces
- 5 button mushrooms
- 1 teaspoon of Trikatu
Preparation of risotto with vegetables and Indian spices
(20 minutes)
First, put olive oil in a pan.
Once hot, pour in the rice and cook for 2 to 3 minutes.
When the rice starts to brown, wet it with water, then add the Turmeric and Trikatu, and let it all simmer for 3 minutes, covered then half-covered.
Check the rice for cooking and add the chopped vegetables. If necessary, add water.
Leave to simmer until the vegetables warm up without the rice turning into paste.
Brown the mushrooms in the pan and add to the rest of the preparation.
Your vegetable risotto is ready to be enjoyed!
