Vegetable masala with tandoori recipe
Tandoori is one of the most widely used spice blends in Indian cuisine.

Here's a recipe for a masala (blend) of vegetables with this sunny spice.
Vegetable masala ingredients (serves 4)
- 2 eggplants
- 2 carrots
- 1 tomato
- 50 g chickpeas
- 1/2 red bell pepper
- 1 tbsp. Tandoori
- 1 tsp. turmeric
- pinch of Pippali (long pepper)
- a few fresh coriander leaves
- 1 tbsp olive oil
- 3 tbsp. soy cream
- water
Preparation of vegetable masala (30 minutes)
Heat the coconut oil in a large saucepan, add the diced tomato and red bell pepper, Tandoori, turmeric and Pippali (long pepper). Once the red bell pepper has browned, add the diced carrots, eggplant, previously cooked chickpeas, water and cover. Add the olive oil and soy cream and cook over medium heat for 15 minutes. Once cooked, add the fresh coriander leaves.
